Can I patent an invention to prevent it from coming to market?

Yes.

A patent grants the right to exclude others from making, using, offering for sale or selling the invention throughout the United States or importing the invention into the United States.

However, as others have indicated, you only have 20 years before the patent expires so you should plan on creating something for the market or re-applying for a patent so that it doesn’t lapse. Once the patent expires, anybody can sell the item if you haven’t already started to do so.
