A list of missing features won’t tell you whether a team would switch. Ask what they do outside the system, which problems they tolerate and what would make migration worth the effort.
Speak with daily users, administrators and people involved in the buying decision. Walk through intake, approvals, signature and renewals. Keep each person’s role and experience attached to the finding so an administrator’s complaint doesn’t become a claim about every buyer.
